A cocktail that takes you to the skies—literally. The Aviation is a pre-Prohibition classic, first crafted in the early 1900s, and known for its striking, sky-blue hue (when made with the elusive crème de violette). A mix of gin, maraschino liqueur, lemon juice, and violette, it delivers a delicate balance of floral, tart, and slightly sweet flavors. It disappeared for decades due to crème de violette’s scarcity, but like all great classics, it made a triumphant return. Sip one and prepare for takeoff.
